My Auntie Paula makes a mean banana bread. Turns out her recipe is her mother's-- my (honorary) Oma Lena's--from when Paula was a child. I got the recipe way back on Thanksgiving weekend, and only had a chance to make it this week! Take a peek.
And here is the star of the show. I find yellow bananas plain disgusting, so I plugged my nose and mashed away.
You can't see but I added a cup of rolled oats (as a substitue for a half-cup flour), and it was a worthy addition, if you like a chewy oat-y texture.
I threw in some coarsely chopped walnuts, too, for good measure (omega-3 fatty acids, vitamin E, copper...).
The finished product. The recipe would have made two decent-sized loaves, but I made one big loaf and twelve mini loaves for lunches.
Apart from the fact that our oven heats unevenly, this recipe was a great success. Five stars.

ReplyDeleteWhen Spencer and I first got married our old oven would slowly get hotter and hotter. I learned that lesson the hard way (quite literally at times) a few occasions!
